194/365–Perogies with Caramelized Fennel Bulb

I used to live with the grandson of a Ukrainian immigrant to Canada.  She’d mail us boxes of frozen homemade perogies that we’d fry up in a pan of onions and butter.  .  . over the years that recipe’s changed a bit, and I no longer receive boxes of frozen deliciousness, but the store bought variety substitutes just fine.

Buy frozen potato onion perogies (potato section of the frozen foods isle)–brown in a pan of salted butter (half stick per box of perogies), thinly sliced onion, smashed and chopped garlic, sliced fennel bulb and chopped onion greens to your satisfaction.  Serve hot, with dollop of sour cream.
