103/365–Creamed Cod on Toast
I don’t take hosting of the book club lightly. Apparently neither does Matt. He located a 1 pound wooden box of salted cod (specifically referenced in such in the book) at the swankiest fishmonger in town. So, creamed cod on toast, served with boiled potatoes and hardboiled eggs make the menu after all. We’ve gone the sample serving size route, and have flaked the fish apart after coating it in the cream sauce, then have everyone stack the egg and potato on top of warm baguette smeared with creamed cod.
I feel like I should admit, I expected this to be on par with the nastiness of lutefisk. In actuality, quite tasty. Very salty, and thus, a nice counterpoint to the bland egg and potato.
