88/365–Root Vegetable Soup
It’s that time of year. . .off and on chilly, requiring a hearty soup with character.
I attempted to use an Alice Waters recipie to make this one. Turns out that her recipie is actully just a bunch of suggestions on how to make soup, so I carmalized some onions chopped up a selection of flavorful root vegetables (parsnips, rutabega, carrots), simmered them for several hours, pureed the lot, reheated it, added some celery seed, pepper and leeks softened in butter. . . and viola! Autumn’s bounty in a bowl of comfort (topped with shreds of parmesan)!
